Baked Haddock Fillets With Crumb Topping

Ingredients:

* 1 1/2 pound haddock fillets
* 1 teaspoon salt
* 1/8 teaspoon pepper
* 3/4 cup soft bread crumbs
* 3 tablespoons butter, melted
* 1/4 teaspoon dried thyme, crumbled
* lemon wedges and chopped parsley for garnish

Methods:

Wipe fillets with a damp cloth. Sprinkle both sides of fish with salt and pepper.Place in a shallow greased baking pan or on a greased broiler rack.Mix bread crumbs with 2 tablespoons of the butter and the dried thyme.Sprinkle over fish and drizzle with remaining butter. Bake at 400° and bake for 20 to 25 minutes, or until fish is flaky and topping is browned. This may take even less time for smaller, thin fish fillets, such as tilapia. Broil for a minute or two to brown the top, if desired. Serve with lemon wedges and garnish with parsley. Other white fish, such as orange roughy, tilapia, or cod, may be used in this easy fish recipe.

Baked Stuffed Haddock Fillets

Ingredients:

* 1 1/2 to 2 pounds fresh or thawed haddock fillets
* 4 to 5 strips bacon, divided
* 1/4 cup chopped onion
* 2 tablespoons chopped fresh parsley
* 2 cups soft bread crumbs
* salt and pepper

Methods:

Cut haddock fillets into serving-size pieces. Dice 2 strips of bacon cook until crisp.Remove bacon cook onion in remaining bacon drippings until soft.Combine cooked bacon with onion, bacon drippings, parsley, and bread crumbs.Season with salt and pepper.Spread bread crumb mixture on half of the haddock pieces.Top with remaining haddock pieces.Arrange haddock in a greased shallow baking dish. Halve remaining two or 3 bacon strips and place on fish. Bake at 325° for 40 to 45 minutes.

Oven Fried Haddock

Ingredients:

* 3/4 cup milk
* 2 teaspoons salt
* 2 to 3 haddock fillets
* 3/4 cup plain, fine bread crumbs
* 1/4 cup grated Parmesan cheese
* 1/4 teaspoon dried leaf thyme
* 1/4 cup melted butter
* paprika
* parsley sprigs
* lemon wedges

Methods:

Oven fried haddock directions.Preheat oven to 500°. Place oven rack near the top of the oven.Put milk in a shallow bowl stir in salt. In another shallow bowl, combine bread crumbs, Parmesan cheese, and dried thyme.Dip fish pieces in milk, then in bread crumb mixture. Arrange haddock on a well greased baking dish drizzle evenly with the butter.

Bake haddock on the top rack for 12 to 15 minutes.Fish should flake easily with a fork. Sprinkle lightly with paprika and garnish with parsley and lemon.

Baked Haddock with Oyster Stuffing

Ingredients:

* 2 haddock fillets
* 1/2 pint oysters, cleaned
* 1/2 teaspoon salt
* pepper to taste
* juice of 1 lemon, about 2 tablespoons
* 1 cup cracker crumbs or bread crumbs
* 1 tablespoon butter

Methods:

Lay 1 haddock fillet in a greased pan sprinkle with salt and pepper.Coat oysters with cracker crumbs and place on fillet.Place other haddock fillet on top of the oysters use toothpicks to hold together.Sprinkle with more cracker crumbs, drizzle with lemon juice, and do with butter.Bake at 350° for about 50 to 60 minutes.

Baked Haddock With Sour Cream

Ingredients:

* 1 package herb bread stuffing, 7 ounces
* 1/4 cup butter
* 2 pounds fresh or frozen haddock fillets, bones and skin removed, or use orange roughy or cod
* 1 cup sour cream
* 1/4 teaspoon salt
* 1/4 teaspoon celery salt
* 1/4 teaspoon dill weed
* 2 tablespoons grated or finely minced onion
* paprika

Methods:

Prepare stuffing with the butter as directed on package. Spread stuffing in a 13×9-inch baking dish. Cut fish into 6 serving-size portions; arrange on stuffing layer.Combine sour cream, salt, celery salt, and dill weed spread on the haddock fillets.Bake at 350° for 1 hour. Sprinkle with paprika.
