Hallelujah Halibut

Ingredients:

2 pounds halibut steaks, 1-inch thick
1/2 cup mayonnaise
1/2 cup sour cream
2 teaspoons all-purpose flour
2 teaspoons fresh lemon juice
1 tablespoon minced onion
1/8 teaspoon white pepper
1/2 cup shredded Cheddar cheese

Methods:

Rinse halibut and pat really dry on paper towel. Arrange steaks, side by side in greased 9 x 13-inch baking dish.Combine mayonnaise, sour cream and flour in small bowl. Stir in lemon juice, onion and pepper. Spoon mixture over fish. Bake, uncovered, at 425 degrees for 20 to 25 minutes.Sprinkle cheese over fish and continue to bake until cheese is melted, about 2 minutes. Serve at once.

Halibut Steak with Oranges

Ingredients:

* halibut steaks
* 1/2 orange per steak
* butter or olive oil
* fresh ground pepper
* mesquite chips (optional)

Methods:

Soak mesquite chips in water for 30 minutes. Place mesquite chips in a smoker box or wrap in aluminum foil and punch holes through the foil. Place on preheated grill. Gently wash the halibut steaks and pat dry.

Brush with butter or olive oil (your choice).Sprinkle with pepper.Cut the orange into slices. When the grill is good and hot put on the steaks, placing orange slices on top to cover. Reduce heat to medium. Turn after about 4-5 minutes (use your discretion, thicker steaks will take longer) Cook until the middle is around 160 degrees F. (72 degrees C.), or until a skewer passes through the steak with uniform resistance.

Halibut Steaks Baked with Butter and Cheese and Potatoes and Cream

Ingredients:

* 2 pounds halibut steaks
* salt and pepper
* 3/4 cup chicken broth
* 1 tablespoon lemon juice
* 4 ounces sliced fresh mushrooms
* 1/4 cup butter
* 3 tablespoons flour
* 1 cup half-and-half
* 1/2 teaspoon salt
* 1 cup grated Swiss cheese
* 6 medium potatoes, halved, cooked
* 1/4 cup chopped fresh parsley

Methods:

Sprinkle halibut with salt and pepper place in a buttered baking dish.Add chicken broth and lemon juice.Cover and bake at 400° for 15 minutes, or until halibut flakes with a fork.Remove from oven drain juices off into a large cup or bowl and set aside.

Sauté mushrooms in butter blend in flour. Gradually add the reserved poaching liquid and the half and half. Cook, stirring constantly, until thickened. Blend in salt and Swiss cheese, stirring until cheese is melted. Place the cooked potatoes around the halibut steaks.Pour sauce over halibut and potatoes. Return to oven for 10 minutes, until hot and bubbly.

Tangy Microwave Halibut

Ingredients:

* 1 pound halibut steaks, about 1-inch thick
* 1 tablespoon finely minced onion
* 1/2 cup low calorie Italian salad dressing
* 1 tablespoon lemon juice
* 1/4 teaspoon seasoned pepper or ground black
* pepper
* 1/4 teaspoon paprika
* lemon slices, optional
* parsley sprigs, optional

Methods:

Arrange steaks in a shallow microwave dish, with thickest areas towards the outside of the dish. Combine remaining ingredients pour over the fish.Cover with plastic wrap and refrigerate for 20 to 30 minutes.Turn once while fish is marinating.Turn back a corner of the plastic wrap and microwave for 4 to 5 minutes on HIGH power, turning dish 1/4 turn after 2 minutes.Let stand for 3 minutes before serving. If desired, garnish with lemon slices and parsley sprigs.

Halibut With Balsamic Marinade

Ingredients:

* 4 halibut fillets, about 4 to 6 ounces each

Balsamic Marinade:
* 1/2 cup balsamic vinegar
* 1/4 cup apricot preserves
* 1/4 cup olive oil
* 2 medium cloves garlic, or 3 small cloves, crushed and minced

Methods:

Wash halibut and pat dry.Put in a food storage bag and add the marinade ingredients.Marinate halibut for about 2 to 3 hours.Grill or broil, turning carefully, for about 3 minutes on each side.
