Herring Salad

Ingredients:

3 herring, cleaned and picked to pieces
3 apples
3 boiled potatoes
1/2 cup mixed nuts
A little piece of cooked veal
1 pickle
A little onion
A little pepper
A little sugar
A few capers
4 hard-boiled eggs

Methods:

Chop all fine, mix the yolks of the eggs with a little vinegar, and mix all together.

Pickled Herring

Ingredients:

6 milk herring,
2 medium sized sour apples, chopped fine,
1 large onion, sliced,
1 tablespoon sugar,
A few pepper corns,
1/2 oz. chopped almonds,
4 bay leaves,
1 1/2 cups vinegar.

Methods:

Soak herring in cold water twelve hours.Clean well, bone and drain.Reserve the milk glands, mash them well, mix, and strain with sugar and vinegar.Place in jar in layers, herring, chopped apples, sliced onions, almonds, pepper, bay leaves, and pour on the vinegar to cover.Cover jar arid keep in a cool, dry place.Almonds and apples may be omitted.

Fresh Herrings

Ingredients:

Herring
pepper
salt
a little pounded mace
butter
flour
mustard
some salt
a little vinegar or lemon-juice

Methods:

Scale and clean the fish with the utmost nicety, split them quite open, and wash the insides with particular care dry them well in a cloth, take off the heads and tails, and remove the back-bones

rub the insides with pepper, salt, and a little pounded mace stick small bits of butter on them, and skewer two of the fish together as flat as possible, with the skin of both outside flour, and broil or fry them of a fine brown,

and serve them with melted butter mixed with a teaspoonful or more of mustard, some salt, and a little vinegar or lemon-juice.
