Kiwi Snapper or Terakihi Raw Fish
Ingredients:
500 grams skinned and boned FRESH snapper / terakihi fillets (or like fish)
Juice of 2 – 4 lemons – depending on your tastes.
2 tomatoes diced
1 carrot grated
1 med red onion diced
1 yellow bell pepper sliced and diced
parsley
1 tin coconut cream
200mls cream
salt and pepper to taste
Methods:
Cut into thin slices fish fillets add to serving bowl. Add onions, lemon juice, salt and pepper to fish, cover with clear wrap and refrigerate for at least one hour. Add all other ingredients, add salt and pepper to taste. For a taste of Fiji, you can add a small amount of pickled ginger (sliced).
